Bountiful Springtime Salad

Salad Ingredients
 8 oz greens (we chose a power mix for extra vitamins & nutrients)
 1 cup sugar snap peas, halved lengthwise
 ½ small red onion, shaved
 1 sumo-orange, segmented
 4 radish, sliced thin
 1 avocado, sliced
 1 bag Roasted Pepitas
 ½ cup feta, crumbled
 fresh herbs (optional)
Orange Pomegranate Vinaigrette
 ¼ cup Olíva! Orange Fused Olive Oil
 2 tbsp Olíva! Pomegranate Quince White Balsamic
 salt & pepper

In a small bowl, combine the vinaigrette ingredients and set aside.

Arrange the greens and herbs (if desired) into a large mixing bowl. Toss liberally with the Orange Pomegranate Vinaigrette.

Arrange the peas, shaved onion, orange segments, sliced radish and avocado. (For added protein, add grilled chicken, roasted salmon, or chickpeas!)

Finish the salad with an even layer of crumbled feta and pepitas. Enjoy!
