Peach Salad with Goat Cheese & Maple Pepitas

This salad is outrageously delicious.. especially on beautiful summer night. It tastes the best when you can get your hands on fresh local greens and juicy peaches!
Maple Vinaigrette
 2 tbsp Oliva! Extra Virgin Olive Oil
 2 tbsp Olíva! Vermont Maple Dark Balsamic
Salad Ingredients
 4 cups arugula
 ¼ cup goat cheese, crumbled
 1 fresh peach, sliced
 ¼ cup red onion, shaved
 ¼ cup Locally Made Maple Pepitas

Divide arugula into 2 separate bowls.

Add equal amounts of peaches, red onion, goat cheese and maple pepitas to each bowl.

Season salad with salt and pepper.

To make the dressing, combine the Olíva! Sicilian Nocellara EVOO and the Vermont Maple Dark Balsamic. Whisk until emulsified.

Drizzle over top of the greens. Gently mix to dress the salad.
