Apple Cheddar Walnut Salad

Salad Ingredients
 8 oz spring mix
 1 small head of radicchio
 1 granny smith apple, sliced thin
 ¼ cup pomegranate arils (seeds)
 ¼ cup dried cranberries
 1 oz cheddar, shaved or grated
 ½ cup walnuts
Vinaigrette
 ¼ cup Olíva! Lemon Olive Oil
 2 tbsp Olíva! Cranberry Pear White Balsamic
 1 tbsp Olíva! Champagne White Wine Vinegar
 ½ tsp mixed berry jam (or whatever jam you have on hand)
 salt & pepper

In a small bowl, combine the salad ingredients and set aside to allow the flavors to meld.

On a large serving platter or in a large salad bowl, evenly plate the spring mix and radicchio.

Arrange the apples around the plate and top with the dried cranberries, pomegranate seeds, cheddar and walnuts.
