Tuscan Herb Dense Bean Salad

Salad Ingredients
 1 can garbanzo beans (15oz), drained & rinsed
 1 can cannelloni beans (15oz), drained & rinsed
 ½ cup green beans (raw), chopped into ¼" pieces
 1 cup English cucumber (seeded) cut into ¼" cubes
 1 cup yellow bell pepper, cut into ¼" cubes
 1 cup cherry tomatoes, halved
 1 (8oz) pack of mozzarella pearls (Bel Gioioso)
 ¼ cup red onion (rinsed to take away the harshness), diced
 1 cup kale leaves, chopped
 ¼ cup fresh parsley, chopped
 salt & pepper
Tuscan Peach Vinaigrette
 1 tsp dijon mustard
 salt & pepper
 1 pinch crushed red pepper flakes (optional)
This Dense Bean Salad is so delicious and will stay good in the fridge for up to 5 days. Packed with nutrient rich ingredients, this yummy snack will be a go-to all Summer long. A great salad to bring to a party or BBQ that won't go soggy! The raw green beans give it a hearty crunch and the dressing brings this salad to life.

Place all the chopped salad ingredients into a large mixing bowl.

In a separate bowl, combine the vinaigrette ingredients and whisk until emulsified. If you have a mason jar handy, you can toss all the ingredients into the jar and shake!

Pour the dressing over the Dense Bean Salad and toss until everything is coated evenly. Enjoy!
