Cherry Basil Vinaigrette - This vinaigrette is so simple and so good. Just 2 ingredients: oil & vinegar! If you wanted to get creative and bump up the wow factor, you could incorporate fresh basil and cherries into the dressing by blending all ingredients in a food processor!

Salad Ingredients - You can add a crunch factor like crispy onions or pecans, and we added chicken but meat is completely optional! To add a veg based protein you can swap the chicken for chickpeas!
 16 oz spring mix
 68 basil leaves, roughly chopped
 2 apples, thinly sliced
 ½ cup dried cherries, roughly chopped
 ½ large red onion, thinly sliced
 ½ cup gorgonzola/blue cheese, crumbled
 6 oz cooked chicken (optional)

Combine the vinaigrette ingredients in a small bowl and whisk until emulsified.

Add the greens and chopped basil to a large salad bowl, or spread out evenly over a large serving platter.

Arrange the apples, dried cherries, red onion and chosen protein evenly over the salad. 

Crumble the cheese over the top (or any other fun ingredients you decide to add).

Serve the dressing alongside the salad.

You may serve the salad dressed if desired! Enjoy.
