Preheat oven to 350°F.
In a large bowl, combine the Olíva! Tuscan Herb Olive Oil, onion, garlic, chicken stock, honey, and rosemary.
Whisk until fully emulsified.
Season chicken liberally with coarse salt and fresh cracked black pepper.
Place the chicken into the marinade and coat evenly. Marinate for at least 15 minutes.
Place chicken onto baking sheet and bake for approximately 22 minutes.
Remove from over and let chicken sit for 5 minutes.
Slice and serve with your favorite potato dish and vegetable.
Finish with a drizzle of the balsamic reduction.

Bring balsamic to a soft boil.
