Chipotle Peach Shrimp Bowl

Shrimp
 1 lb shrimp, peeled & deveined, (we used 26/30)
 ½ tsp cumin
 ½ tsp chili powder
 ½ tsp smoked paprika
 pinch of cayenne pepper
 salt & pepper
Ingredients
 1 cup white rice, uncooked
 juice of ½ lime
 ¼ cup cilantro, chopped
 1 cup cherry tomatoes, halved
 ¼ red onion, chopped
 1 avocado, sliced thin
 1 jalapeno, sliced thin
 cilantro
These Chipotle Peach Shrimp are smoky, slightly spicy with a hint of sweet. They'll be gone before you know it.

Combine the marinade ingredients in a large mixing bowl and whisk together.

Add the shrimp and marinate for 20-30 minutes, for up to an hour.

While the shrimp marinates, cook the rice according to package instructions. Toss with the lime juice and cilantro, set aside.

Cook the shrimp for 3-6 minutes per side or until opaque, depending on size. Grilling will add a nice char flavor but you can easily sauté them in a pan too! The same cooking time applies.

Assemble your bowl starting with the rice, add the shrimp, onions, tomatoes, avocado, jalapeños and cilantro. Enjoy!
