Olive Oil Pancakes

Scrumptious Lemon Olive Oil pancakes that are pleasantly rich, fruity, and dense but still fluffy... served with a Blueberry Balsamic reduction. Yum!
 1 ¾ cups all purpose flour
 2 tbsp sugar
 2 tsp baking powder
 ½ tsp baking soda
 ¼ tsp salt
 1 egg, lightly beaten
 1 ½ cups buttermilk

Add the Olíva! Blueberry Dark Balsamic into a small nonstick pot and heat over a low flame until reduced by about half, this should take about 5-10 minutes.

While the balsamic is reducing, whisk together the flour, sugar, baking powder, baking soda and salt in a large mixing bowl.

In a separate bowl, whisk together the egg, buttermilk and 2 tbsp. of Olíva! Lemon Olive Oil.

Pour the wet mix into the dry mix and combine.

In a skillet or cast iron, heat 2 tbsp of Olíva! Oro Bailen Picual Extra Virgin Olive Oil over medium-low heat.

Ladle ¼ c of batter into pan and cook until golden brown, about 2 minutes each side.

Remove and keep warm in foil or in a low heated oven until ready to serve.

Serve with a drizzle of the Olíva! Blueberry Dark Balsamic!

To add a little extra sweetness, serve with a drizzle of Bee Hollow Farms Local Raw Honey and fresh berries!
